Ovaleks Pastry Additive (cake emulsifier)
Directions for use and places of use: Used in cakes , sponge cakes, making of prep dough and rolls as an additive. The usage rate in accordance with the Turkish food Codex is between 1% and 4%. It increases the volume of the products, delays the stale time and regulates the dough structure.
Sample sponge cake recipe: 1100 g flour, 1500 g whole eggs, 1000 g sugar, 150 g starch, 500 ml water,150 g ovalex additive, 50 g ovaleks baking powder. Whisk all ingredients in Mixer for 2 min slow speed for 5 min fast speed, bake at 180 °C for 40-45 min.
Storage conditions: Keep closed in a cool and dry place.
